Actually do a meal plan, or; yep I blew my money on Christmas too.

7-day gluten-free food shop for 2 under £40, get into it.

Hey! Christmas is expensive. I don’t know about you but January is an equally ridiculous spending time for me given the whole ‘New year new me’ self-care-get-fresh-new-start attitude I get – and that mainly materialises in going to the gym (£) and buying things for round the house (££).

With that in mind, I’ve had to veer back to my meal planning, and I thought it might be helpful to put it up on here.

To save anyone having to read through more chatting if they’re just wanting to see the plan (7 days, 3 meals a week for 2, and a shopping list) go ahead and take a look at the google sheet below:

Cupboard staples

Spices are a great way to amp up any meal, and they're cheap as hell.

I’ve gone through this in my post on how to save money whilst still eating healthy, but there’s some stuff in this shop that I’ve included in the shopping list but didn’t buy this time – if you were purchasing literally everything in there from scratch, you might hit nearer to £50. These kinds of things come to mind (and if you haven’t got them, get them – they’ll last way more than a week):

  • Cooking oil
  • Balsamic vinegar
  • Dried spices
  • Pulses
  • Stock
  • Garlic
  • Rice
  • Frozen veg

Prepping & portions

I’m not great at prepping, but part of my ‘new year new me’ schtick is that I’m setting aside half an hour a night to at least cook dinner – in that time I’m cooking lunch as well.

The other thing that you can prep well in advance is the homemade granola, which prices out at around 8p a portion according to Jack Monroe.

Make it on Sunday, take it to work on Monday and use it all week. I’m s*** at eating before I leave in the morning so my new method is to have as much food as possible at work so I don’t forget it.
